I've decided (with no real proof) that yeast has been one of the basis of "civilization".
Leavened bread, all manner of alcoholic beverages, depend on our tame yeasts. For a long time, folks drank beer or wine because the quality of water was, at best, questionable.
Bread and beer, bread and wine (where did I hear about that one before? hmmmm.), absolute mainstays of life.
Then there's whiskey -- "water of life".
By golly, is our vaunted civilization based, to at least some part, on YEAST SHIT?
Is that what we are so damn PROUD of?
YEAST SHIT -- foundation of western civilization.
